Quick method
- 1Fry potato slices in olive oil in an oven-safe pan until golden both sides (~8 mins). Remove and set aside.

- 3Return potatoes to pan, spread into an even layer.

Cheesy Potato & Onion Frittata: The Meal That Works at Any Hour
Frittata is the answer to leftover potatoes. It is also the answer to not knowing what to have for lunch, not wanting to go shopping, and genuinely not having the energy to cook something complicated. Eggs, a potato, an onion, and cheese. Twenty minutes.

🍳 The Method
Step 1: The potato base
Slice 2 medium potatoes thinly — about 3–4mm. If you have leftover boiled or roasted potatoes, even better. Fry the slices in olive oil in an oven-safe pan over medium heat until golden on both sides, about 8 minutes. Remove and set aside.
Step 2: Soften the onion
In the same pan, fry 1 large sliced onion until soft and slightly caramelised — about 6 minutes. Season with salt, pepper, and a pinch of thyme. Return the potato slices to the pan and spread everything into an even layer.
Step 3: The eggs
Beat 5–6 eggs with salt, pepper, and a handful of grated cheddar or gruyère. Pour over the potatoes and onion. Tilt the pan to spread the egg evenly. Cook on medium-low for 3–4 minutes until the edges are set but the centre still wobbles.
Step 4: Finish under the grill
Scatter more cheese on top and slide under a hot grill for 3–4 minutes until puffed, golden, and just set in the middle. Leave to cool for 2 minutes before slicing. It cuts cleanly and holds its shape — good hot, good cold, good the next day.
